This week we will be making a crème, flavouring it with our favourite fruit and making it into a pudding.   This recipe also makes a great filling for a pie.  You can take the base and add whatever fruit you desire to give it a kick of flavour.  We love using Lemon Zest, Cherries,  Carob or even Chocolate.  The recipe below calls for orange zest. Orange pudding Zest is made by scraping the colorful skin of un-waxed citrus fruits such as orange, lemon or lime.   We prefer to use organic fruits so there are no chemical residues on the skin.  Make sure to wash the outside skin with veggie wash before making the zest. Making the Crème

  • 2 c of coconut meat or pulp
  • 2 c of coconut water
  • 2 fresh vanilla beans
  • 1/2 tsp of pink salt

Mix all the above in a blender until smooth and creamy.  Adjust amount of coconut water to meet this consistency. Adding the Orange Flavouring Add the following to the above Crème and blend until smooth

  • 1/4 cup of carrots
  • 1 Tbsp of Orange Zest (from the skin of Organic Oranges if possible)

Pour into fancy glasses or small bowls and top with a slice of orange as a garnish and serve chilled.  You can also sprinkle some cacao nibs on top as a little bonus. ENJOY  🙂
