It’s almost spring time and most garden owners have already  planted their seeds for the year.   A couple of easy to grow veggies are broccoli and leeks and they make the perfect combination for our soup creation for this week – Spring Inspired Broccoli Leek Soup.

This recipe is very quick and easy.  All you need for tools is a high powered blender.

  • 1-2 medium leeks
  • 1 head of broccoli
  • 1/3 cup sesame seeds
  • 1/3 cup pine-nuts
  • 1/3 cup of cashews
  • 1/4 cup of avocado oil or olive oil
  • 1 avocado
  • 2-3 cups filtered water
  • 1 Tsp sea salt

Blend all the ingredients in a high powdered bender until smooth. Adjust water so that you get a creamy consistency.  You can also add a tablespoon of nutritional yeast for a cheesy flavour.

Garnish with a small sprinkle of finely chopped leeks and/or nutritional yeast.  You can also add some cubed avocado for texture.

    1. When we first made it, it was hot (not boiling of course, but hot enough to fool most people). Then the leftovers we put in fridge and after that we ate it cool/cold as it also tasted pretty awesome that way too. It’s amazing how quick you can make a raw meal in a blender – only a couple minutes vs. having to use a stove and not have any control over the temperature or nutrient loss. Either way it is a delicious soup indeed! 🙂
