This recipe is very quick and easy and only takes about 3-5 minutes to make. Great for a last minute addition or very filling on it’s own.
1/2 cup of Premier Tomato Concentrate
1 – 2 medium tomatoes
3/4 cup of cashews
1 – 2 cups of water
Salt to taste
Ground pepper to taste
Blend the tomatoes, cashews, tomato concentrate into thick soup. Add water to help blend but don’t make it too runny. You can also adjust the tast by adding more or less of the tomato concnentrate. Add salt and pepper to taste. Pour into bowls and serve with a garnish of parsley or cilantro. You can also add a teaspoon of nutritional flakes to each bowl and stir before serving.
