The Sedona Dehydrator is only available in 9 the tray model, it has a dual fan which allows you to dehydrate different items at the same time. This is a neat feature if you are dehydrating limited quantities of a specific item. The Sedona has digital timer that can be set for up 99 hours. It also has a night feature which allows you to slow down the fans, which makes it quieter. The Sedona also has a glass face where the Excalibur has a solid face. Esthetically, some see it as having a nicer ‘look’ to it.

The Excalibur is the staple in any raw restaurant, since the company has been producing the product for over 40 years. It is like the ‘work horse’ of dehydrators.
Bigger is better, when it comes to dehydrators. If you can fit a 9-tray in your house then that would be your best bet. This is in case you are dehydrating something that is thicker you can remove one or two trays to make it more effective. This is extremely helpful when making Kale chips. When you have the option to remove trays it allows you to make bigger batches and speeds up the process.
The noise level of a dehydrator is similar to that of a microwave. The Sedona is a bit quieter then the Excalibur’s, and that noise can be reduced when set to the night setting.
So you have chosen what dehydrator fits and the model that you want. The next question that you need to face is how many Non-Stick, Coated, Washable Sheets to order? The non-stick coated sheets are to help make your life easier. When you are making things like breads or other wet recipes it prevents the batter from seeping through the holes.
Non-stick Coated washable Sheets or the Genuine Excalibur ParaFlexx Premium Non-Stick Sheets. The difference is basically name brand and not. The final decision is personal but besides the name there is not much difference.
The last and final question before you place your order is do you need a book to help with recipes and ways to dehydrate different foods, if so you might want to want to look into the Dehydrating Bible, for example.
